Breakfast of Champions



I love to make time in the mornings for a good big bowl of porridge, as it's so filling and sets you up for a long day.  Porridge is great because it can be enjoyed plain, or changed up a bit every day so that  you never get too bored of eating the same food!  This recipe is what I made this morning, and as well as being ridiculously simple, it can also be changed depending on your preference or what you have in the cupboards that day.  This makes quite a big portion as I was very hungry, so you can half it depending on hunger.  The only real method involved is preparing the porridge!



Ingredients:

- 1 cup of porridge
- 1 cup of water
- 1 cup of almond milk (dairy or another substitute works just as well)
- generous handful of granola
- 1 tbsp of flaxseed
- 1 tbsp of chia seeds
- large squeeze of honey to top

Method:

- Put a saucepan on medium-high heat and pour in your porridge, water and milk.  If you like it extra creamy, use 1 part porridge to 2 parts milk and forget about the water.  Stir frequently until it comes to the boil.
- Simmer for 3-5 minutes, constantly stirring to ensure it doesn't stick to the pan and it all cooks.
- Take it off the heat and stir for another minute or so to help it all cool down.
- Pour into a bowl and top with your chosen ingredients.
- ENJOY!

This breakfast is so easy to make yet so delicious and healthy.
